How does a Mumbai restaurant run its day?
In two or three short, hard rushes. In the office districts of Lower Parel, Fort and BKC, lunch is short and a table that turns twice earns twice. In Bandra and the western suburbs the evening runs late. Rents are among the highest in the country, so every table has to work.
The floor is where that is won. On CountStand every table shows whether it is free, running, in the kitchen, billed or paid, and how long it has been running, so a manager sees which table is about to free up without walking the room.
What keeps the kitchen in step?
Tickets with a clock. Each round reaches the kitchen the moment the captain sends it, with its station and its age. The board turns a ticket amber at four minutes and rings it in red at eight, and puts the late ones first. Breads, mains and drinks can each go to a station of their own.
Captains take orders on a phone at the table, so a full room never waits while someone walks to a terminal.
What happens when the monsoon takes the line down?
Service carries on. The till keeps billing, taking cash and settling, and an amber chip says how many actions are waiting. Kitchen tickets and bills wait in the till’s queue and print when the line returns, in order and exactly once, so the kitchen should expect a burst of tickets when it does.
Can a Mumbai restaurant use CountStand now?

Running a Mumbai floor: questions
Yes. Every running table’s tile shows its bill and how long it has been running, and the header counts how many tables are occupied.
A phone is enough: Captain puts the floor in one hand, and a table opened there is the same bill the till sees.
A tablet or a TV with a browser for the board, or a network thermal printer for paper tickets, or both. USB and Bluetooth printers are not supported.
Nothing special. The trading day turns at 5 am, so a 1 am bill belongs to the evening it was earned in, and the drawer is counted once, at close.
