Why should the floor plan be live, not a laminated map?
The old floor map is a drawing at the host stand that everyone else keeps in their head. The captain thinks table nine is free; the manager just sat it; the biller is chasing a tab that already moved. On a full night those three pictures drift apart, and the cost is a double-seated table, a lost round of drinks, and an argument at the pass about who ordered what.
A live floor plan collapses those pictures into one. How does captain mode change table-side service?
In the classic setup a waiter writes an order on a pad, walks to a fixed terminal, and keys it in, and somewhere in that walk a modifier is dropped or a table forgotten. Captain mode puts the terminal in their hand: they stand at the table, take the order on a phone, confirm the covers, and fire it to the kitchen before they have taken a step back toward the counter.
The same floor does double duty for what is booked. A booking is pinned to a real table on this plan, so a party expected at eight already owns its seats and the host is never selling them twice. Walk-in counters get a kiosk running on the same engine. Whatever the order’s origin, captain, kiosk or booking, it lands on one floor and settles through one bill.
